M5 EGG & SAUSAGE BAKE
1 lb Five Marys Breakfast Sausage
8 farm eggs
1 pint cherry tomatoes
1 can crushed tomatoes, rinse with water
1 red bell pepper, diced
1-2 potatoes, shredded or diced
2 tbsp extra virgin olive oil
1 small yellow onion, diced
3-4 cloves garlic, peeled and crushed
M5 Spice Rub or salt and pepper to taste
Optional: 1 jalapeno
Garnish: crumbled feta or farmers cheese, parsley or cilantro
In a 10-12” castiron or heavy bottomed pot onmedium heat crumble breakfast sausage and stir until cooked through. Add oil, shredded or diced potatoes, cherry tomatoes and bell pepper cooking on medium to high heat. When veggies have a good char and potatoes are soft, reduce heat to medium and add chopped onion and garlic cook until soft. Add canned tomatoes to pot and sprinkle with M5Spice Rub or salt and pepper. Return sausage to pan and let simmer for 5-10 minutes on low.
Add eggs using a small bowl crack an egg at a time using a spoon make a well in the sauce and slide egg in, salt and pepper eggs. Add dollops of feta or farmers cheese between eggs.
Pop pan into the oven and bake at 325 until the whites of the eggs are set (or cover pan on stove to steam the eggs until firm)
Sprinkle with fresh herbs and serve with warm flatbread or toast.
