Smoker Pellets : Hardwood pellets in alder and apple wood
Cut : Five Marys dry-aged ground beef
Ingredients :
For the meatloaf –
- 1 slice sandwich bread
- 1/2 cup grated onion
- 1 cup ketchup, divided
- 1 tablespoon dark brown sugar
- 1 tablespoon yellow mustard
- 1-2 tablespoons soy sauce
- 2 cloves crushed, minced fresh garlic
- 1 egg
- Salt and pepper to taste
- 2 pounds Five Marys Farms ground beef
For the potatoes –
- 6-8 Yukon gold potatoes
- 2 teaspoons kosher salt
- 1 bunch young, tender flat leaf parsley, finely chopped, bottom stems removed
- 1 cup butter
- 2-3 cups whole milk
- 1 cup heavy cream
- Salt and pepper to taste
Instructions :
For the meatloaf –
- Preheat the smoker to 350 degrees F.
- Pulse the sandwich bread in a food processor until it’s a fine crumb.
- Add all ingredients plus the bread crumbs to a large mixing bowl.(reserving half of the ketchup) and mix gently until completely combined.
- Place the meat into a cast iron loaf pan or skillet.
- Spread the remaining ketchup over top and cook in the smoker 60-90 minutes.
- Check the meat often as the bottom may darken before the meat is done.
- Keep the meatloaf over indirect heat until fully cooked and nicely caramelized.
For the potatoes –
- Slice the potatoes into quarters, place in a large pot, and cover with water.
- Add kosher salt to the pot.
- Bring to a boil and simmer until potatoes are knife tender.
- Drain the water and turn the heat to low.
- Add the parsley, butter, milk, and cream to the potatoes in the pot and mash with a hand masher (the heat from the potatoes will gently cook the parsley).
- Start with just 2 cups of milk and if you need the third cup, add it in 1/4 cup increments.
- Season with salt and pepper.
