Ground Beef Lasagna Soup

Serves : 4-6 people

Prep time : 15-20 minutes

*Instant pot cook time : 6 minutes

*Slow Cooker cook time : 2+ hours

THE CUT : Five Marys Dry-Aged Ground Beef

Ingredients:

  • 2 pounds Five Marys dry-aged ground beef
  • 1 teaspoon olive oil
  • 1 red onion, diced
  • 3-4 cloves fresh garlic
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • Kosher salt & black pepper to taste
  • 1 – 28-ounce can crushed tomatoes or prepared marinara sauce
  • 6 cups chicken broth
  • 10 dried lasagna noodles broken into pieces

Garnishes: chopped chives & shredded mozzarella

Instructions:

  1. On the stovetop, brown the ground beef in olive oil over medium-high heat.
  2. Transfer the browned ground beef along with the rest of the ingredients to the instant pot / slow cooker. Make sure to season generously with salt and pepper.
  3. Cooking Instruction:
    • FOR INSTANT POT: Apply lid and set for 6 minutes. Manually release pressure and serve.
    • FOR SLOW COOKER: Set to high for 2+ hours.
  4. Serve once the noodles are tender.
  5. Serve with lots of shredded mozzarella and chopped chives. Enjoy!
