Five Marys Lamb Meatballs

Cook Time : 30 minutes
Ingredients :
- 2 pounds Five Marys Lamb, ground
- Olive oil
- 1 cup Onion, small dice
- 1 clove Garlic, crushed
- 1 cup Panko Breadcrumbs, moisten with milk or red wine
- 1 teaspoon Tomato Paste
- 1 Tablespoon Red Wine
- 1 Tablespoon Pecorino or Feta Cheese
- 1 clove Garlic, crushed
- 1 each Farm Egg
- 1/4 cup Flat Leaf Parsley, finely chopped
- 1 Tablespoon Oregano, finely chopped
Instructions :
- Add onion and garlic to a pan with a drizzle of olive oil and cook until soft
- Cool down and add to bowl with remaining ingredients and mix until fully incorporated
- Make a small patty and cook in a pan to test your seasoning
- Adjust seasoning and form small balls using a cookie scooper and rolling in your hand
- Bring you sauté pan to medium high heat with a drizzle of olive oil and sauté meatballs rolling them every now and then
- You should get a nice browning all around
- Remove to a tray and repeat with remaining meatballs
- When done place meatballs in a baking dish and top with spicy marinara
- Serve with Pasta and grated pecorino
