March 14/2023 part 2 because I don’t want to forget the infamous haircut day and photos are good memories too! He was, as always, the most selfless, calm, entertaining girl dad. He still looks handsome even with a short haircut done by his daughters. And I made him a good stick-to-the-ribs pot roast dinner afterwards. ☺️ a good night in our cozy house.

March 14, 2023. More snow. Like so much snow! So late in the season. Snuck in a date night and navigated a few challenging things but this month is kinda non-stop challenges coming at us. It’s a season. Just like the snow. And date night fixed everything! That and a well-shaken sidecar. 🥂

Feb 27/2023. Spent a snowy Monday in Ogden, Utah waiting for the rodeo to start! Enjoyed our cozy tent camp, ate leftover pizza, built snowmen, exercised and cared for horses, went on snow walks and had a yummy taco dinner with @passalacquawinery. Back to the trailer to sleep and awake for a few hours in the middle of the night when a snow squall came through with thunder, lightning, winds and hail! Tent survived. :) Ready for the rodeo to start tomorrow but enjoying the adventure in the meantime!

Feb 24/2023. Woke up to a ton of fresh snow! So much that the mountain pass was closed and we had to wait it out to make the trek to mount Ashland for the first school ski day of the season. But it cleared up by 9am and we were on the road! Carpooled with another mom and hung out in the cozy lodge for the day while the girls skied and snowboarded (JJ) with all of their friends. The highway closed again that afternoon but they held traffic just above where the ski mountain comes out – so we got to drive home on clear roads with not another car on them! Cozy Friday night at home after a full day on the mountain. ⛷️

I can’t believe how far we’ve come. Fresh faced almost a decade ago with big dreams to raise and sell really good beef from start to finish… Doing things the right way isn’t easy. And being really proud of the best possible animal care and end product for your customers means a lot of extra attention and time and honestly… blood, sweat and tears. There are big obstacles in this industry to get quality meats on your table direct from a family ranch. But not doing it all and doing it really well wasn’t an option for us. Last year we opened the doors to Five Marys Custom Meat Co and we are so proud to have a talented team of craft butchers making certain every steak we produce is dry-aged, cut and packaged beautifully and each pound of ground beef is handled the same. We are able to use more of each animal and produce custom cuts for our customers. This month, we’ve successfully harvested our own beef (beeves!) under USDA inspection right here on the ranch in our harvest barn and mobile unit. We have a team of three plus Brian and a USDA inspector on site at all times to ensure animal handling and harvest is done according to protocol and care standards and each carcass is inspected before it comes to Five Marys Custom Meat Co for aging and butchering. This was our big dream that seemed so unattainable – and it’s been an incredible amount of labor and thought and resources involved to get here. But to finally be vertically integrated and to have control over every step of the process is so worth it – knowing we are doing the best for our animals and for our customers!

I love a full week at home to COOK in my kitchen! Having good quality meats honestly sales it so easy. I grocery shop once a week for produce (broccoli, zucchini, yellow squash, tomatoes, carrots, brussels and asparagus usually) and potatoes, rice, tortillas, noodles and bread – along with butter, milk, cream, cheese and olive oil. I pull out some ground beef, beef fajita strips or steak bites and a few nice steaks or pork chops to put in my meat bin in the fridge to thaw. I don’t meal plan, but I know with this system I always have something to cook up for a great, easy but delicious dinner no matter how many I’m feeding. Good quality meats on hand makes it so easy and no matter how simple the recipe or cooking style (simpler the better) you can’t go wrong.
