Ingredients :
1 1/2 teaspoons dry instant yeast
1/4 cup lukewarm water
¼ cup sugar
2 cups all purpose flour, sifted
1 tablespoon of ground cereal grains (oatmeal, farro or flax seed)
3 cups buttermilk or whole milk
3 large eggs
1 teaspoon salt
2 teaspoons vanilla
¾ cup melted butter
Instructions :
- Add yeast in lukewarm water with sugar and let rehydrate for 10 minutes.
- Whisk in milk and eggs into bowl and sift in dry ingredients.
- Add melted butter and stir until smooth cover with damp towel and let rest for 1 hour.
- For fluffy waffles, separate eggs and add yolks with butter and whip egg whites separately into stiff peaks.
- Fold in whites in two additions.
- Heat waffle iron to medium heat and with pan spray spray both sides.
- Add batter and cook according to waffle maker instructions.
- Top with rhubarb compote and whipped cream.
