Cut : Five Marys Beef Heart

Ingredients :
- 1-2 beef hearts, 4-5 pounds
 - 1/4 cup minced shallots
 - 1 tablespoon minced capers
 - 1 tablespoon parsley and chives
 - 1 tablespoon dijon mustard
 - 2 tablespoon of good olive oil
 - 1 teaspoon lemon juice
 - 1 teaspoon red wine vinegar
 - 1/2 teaspoon chili flake of your choice, something smoky
 - Sea salt and cracked black pepper
 - 1 egg yolk, optional
 - Handful of edible flowers or alfalfa flowers for garnish
 

Instructions :
- Trim the heart of sinew and gristle, and cut into small chunks.
 - Chop finely with two knives or with a meat grinder on a 1/4 inch dye.
 - Chill thoroughly.
 - In a mixing bowl, mix ingredients and taste to adjust salt.
 - Add egg yolk for creaminess.
 - Serve with crackers and garnish.
