Barbacoa Beef Tongue Tacos

Serves : 10 people

Prep Time : 10 minutes

Cook Time : 3 hours

Cut : Five Marys Beef Tongue

Ingredients :

For the Braise

  • 1 ea. beef tongue, rinsed
  • 1/4 ea. onion, left over from dicing
  • 4 cloves garlic, crushed
  • 1 bay leaf
  • 1 tsp. sea salt
  • Water to cover

For the Barbacoa Spice Mix

1 onion, small dice, end cuts use for braise

2 tablespoons Mexican chili Paste

Instructions :

In a pot, crock pot, or pressure cooker, simmer tongue until tender (about 3 hours).

Let cool and peel off skin and any tough pieces.

Add a spoon of chili paste as desired and season with salt.

Add pulled tongue to mix and warm for serving.

Serve with corn tortillas, salsa verde, onion and cilantro.

Enjoy!
