Ingredients:
- 1 pound Five Marys Farms ground beef
- 1 small onion. finely diced
- 2 cloves garlic, smashed
- 1 red bell pepper, cored and diced
- 2 cups broccoli florets
- 2 carrots, shredded or grated on a box grater
- 3 cups day-old cooked white rice
- Sesame seeds for garnish
- Chopped green onions for garnish
For the Teriyaki Sauce:
- 1/4 cup soy sauce
- 1/4 cup thick teriyaki sauce
- 1 teaspoon yellow mustard
- 1 teaspoon rice vinegar
- Cracked black pepper
- 1 teaspoon sesame oil
For the Yum Yum Sauce:
- 1/2 cup mayo
- 2-3 tablespoons sambal or chili paste
- 1 teaspoon sesame oil
- Cracked black pepper to taste
Instructions:
In a large skillet, brown the ground beef and onion over medium-high heat.
Add the garlic and veggies, then sauté 2-3 minutes. This will give the veggies a bit of crunch, but if you prefer them softer, sauté longer.
Add the rice to the vegetables.
Cook 3-4 minutes.
While the rice and veggies cook, whisk together the teriyaki sauce ingredients.
Pour the sauce over the rice mixture and gently fold the rice into itself to evenly distribute.
Continue cooking 2-3 minutes.
Whisk the yum yum sauce ingredients and set aside.
To serve, dish up bowls of the rice and veggies, then garnish with sesame seeds, green onions, and a drizzle of the spicy yum yum sauce.
