Cut : Five Marys Leg of Lamb
Ingredients :
For Lamb Skewers –
2 pounds Leg of Lamb, 1 inch cubes
1/2 cup Red Onions, sliced paper thin
1 each Meyer lemon, whole cut in small chunks
1 tablespoon parsley, chopped fine
1 tablespoon anchovy filets
1/4 cup olive oil
Pinch of chili flakeĀ
Salt and pepper to taste
For Harissa Mayo –
1 tablespoon harissa paste
1 egg yolk
1 garlic clove, crushed
1 teaspoon white wine vinegar
1 cup olive oil, light in flavor
Salt and pepper to taste
Instructions :
For Lamb Skewers –
- Cut meyer lemon and remove seeds.
- Blend lemon, anchovy and olive oil in a high speed blender put in a bowl and add remaining ingredients.
- Rub over meat and let marinate for an hour.
- Soak flat skewers and skewer meat making sure to get some onion with each piece.
- Clean grill and rub a little oil on before grilling.
- Make sure you get a good sear before turning skewers.
- Serve with harissa mayo on the side.
For Harissa Mayo –
- In a blender add all ingredients except oil and blend on low. Stream in oil and add water if it gets too thick. Taste and adjust seasoning.
