Blueberry Dutch Pancakes

One of our favorite weekend morning breakfasts on the ranch! A Dutch Baby or Dutch Pancake is really easy and always starts with a smokin’ hot cast iron pan.

Makes : 1 large skillet or 2 small skillets

Prep Time : 15 minutes

Cook Time : 15-20 minutes

Ingredients:

  • 4 farm eggs
  • 3/4 cup whole milk
  • 2 tablespoons sugar
  • 1/2 teaspoon lemon or orange zest
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all purpose flour, sifted
  • Pinch Kosher salt
  • 2 tablespoons butter, melted
  • 1 tablespoons lard 
  • 1/2 cup blueberries

Instructions :

  1. Preheat oven to 450 degrees F.
  2. Beat wet ingredients until broken up and sift in dry ingredients.
  3. Add melted butter and stir in.
  4. Let Batter rest in fridge for 10 minutes. 
  5. In the meantime, put a 12” cast iron pan in oven to pre-heat. 
  6. Remove cast iron pan from oven and add lard to melt.
  7. Add batter and sprinkle blueberries in.
  8. Bake in cast iron pan at 450 degrees F for 15-20 minutes.

    How many Dutch Pancakes will your family eat? I only have 1 large Iron skillet. I wonder if that would be enough to fill him up!! He loves a good pancake and they look delicious!!
